To make perfect cream puffs that are light and evenly shaped, it is important to dry out the choux pastry well over heat before adding the eggs. This helps the dough rise properly during baking.
Do not open the oven while baking, otherwise the puffs may collapse. Once golden and well puffed, let them cool completely before filling to keep a good texture.
